Restaurant l'Apostrophe
Concept
Mediterranean cuisine is a celebration of life in its simplest and most authentic form, elevated to art through the purity of its ingredients. It is a gastronomy born from the generosity of the sea, the fertility of the land, and the ancestral wisdom of the peoples who have lived along its shores.
The Mediterranean reveals itself in golden olive oils pressed from ancient groves, in fish and shellfish still carrying the scent of the ocean, in sun-ripened vegetables, and in aromatic herbs that bring freshness to every dish. It is a cuisine that honours seasonality, respects simplicity, and values the joy of sharing at the table.
Yet, beneath this apparent simplicity lies a natural sophistication: subtle combinations, a perfect balance of acidity and sweetness, freshness and intensity, tradition and modernity. It is a cuisine that embodies lightness, health, and elegance, always guided by the belief that true luxury lies in the essence of the product.
At Le Barrington, Mediterranean cuisine gains a new dimension: each dish is conceived as a contemporary expression of this heritage — refined in detail, yet always faithful to the warm, convivial spirit that makes the Mediterranean one of the world’s great culinary cultures.
The 1,200-bottle wine cellar becomes the beating heart of the project: not just a repository, but a temple of wine that guides the gastronomic journey.

Sophisticated Mediterranean Cuisine
Le Barrington celebrates products of excellence and renowned origin: fresh sea bass from the waters of Olhão, shellfish and oysters from Ria Formosa, veal from the Alentejo pastures, lamb from the Serra de São Mamede, Iberian black pork from free-range montanheira farms, tomatoes and peppers from Algarve gardens, figs and citrus from the Costa Vicentina, extra virgin olive oil from centuries-old Alentejo groves, and aromatic herbs harvested on sun-soaked hillside terraces. Each ingredient tells a story of terroir, freshness, and tradition, transformed into sophisticated, light, and shareable dishes.
Ambience
Main dining room: Contemporary elegance meets cheerful and harmonious colours. Warm terracotta, soft golds, and deep petrol blues are complemented by natural wood and stone details, creating a luminous, welcoming, and refined space. Each table is carefully positioned to ensure comfort and privacy, while cinematic lighting highlights both the architecture and the presentation of the dishes.
The private dining rooms follow the same colour language, with a more intimate touch, ideal for exclusive dinners or refined gatherings. The result is a restaurant that exudes Mediterranean energy, warmth, and elegance, where every detail invites a memorable experience.
